Peach Cobbler

Ingredients:
7-10 Ripe Peaches
5-7 Nectarines
2-3 Lbs of Dates
2-3 Cups of Pecans. Use dried figs instead if low-fat is desired.
Cinnamon

Directions:
This recipe is created in layers. You will need a food processor and a Vitamix blender. You will also need a pie pan of your choice. I like using one with a pop-up bottom to easily remove from the tray.
The first layer is created in the food processor with your pecans, 3/4 of your dates, and cinnamon. Place all ingredients into your food processor and pulse until you get your cobbler crumble. Take this cobbler crumble and press it into the bottom of your pie pan.
Your next layer is thinly sliced ripe peaches.
On top of the layer of peaches, you will press on top another layer of your cobbler crumble.
Apply one more layer of thinly sliced peaches. On top of the peaches, you will then pour your nectarine drizzle! For this creamy sweet sauce, blend your nectarines (remove pitt) with your dates and cinnamon. Drizzle this on top of your pie.
Add a few more peaches on top and spinkle with cinnamon and ENJOY!
